Try out this Green “Egg Fried Rice” for a delicious spin on a dish we all love. Try using Right Rice and JUST egg to make it vegan.

 

So, I want to challenge all of you out there who think that vegan food can’t pack a punch taste-wise. This is also one for all of you who think that food replacements can never be as good as the real thing. It’s time to think again!

Now, don’t get me wrong…obviously you all know I love my meat. I’m not even close to being vegetarian, let alone vegan. But sometimes, it feels really clean to eat vegan, and it can be a great little health kick. Plus it’s always great to have a couple of vegan recipes up your sleeve for when a vegetarian or vegan comes to dinner. These are not uncommon dietary requirements these days, so don’t let them take you by surprise!

So What Are These Alternatives to Rice and Egg?

Ok, so let’s start with the Just Egg. In brief, Just Egg is an entirely plant-based egg alternative. It comes as folded ‘egg’ or as a liquid ready to scramble, and you can use either here. I was absolutely amazed at how easy it is to use, and how much like the real thing it tastes. And I am of course super fussy. Try it…it will undoubtedly surprise you.

What About Right Rice?

RightRice is a vegetable-based grain alternative that in fact tastes and feels just like traditional white rice. It’s mainly made from lentils, chickpeas, and peas, so it has more than two times the protein and five times the fiber of white rice. All in all it is a great, healthy rice alternative. As I have noted, it is quick to make and super user-friendly. To be sure, you are gonna love it.

How To Cook It RIGHT!

  • For a whole packet of Right Rice, firstly bring 1 1/3 cups of water to a boil.
  • Then, shut off the heat
  • At this point, add the contents of the bag of the rice
  • Give it a stir through
  • Place the lid on top and let sit until 12 minutes are up. It’s in fact that easy!

Green “Egg Fried Rice”

Take your fried rice to a healthy new level with this super-powered green vegetable fried rice using both RIGHT RICE and JUST egg.

  • Total Time: 20 minutes
  • Yield: 4

Ingredients

1 packet Fried Right Rice

2 tablespoons olive oil

1 shallot, minced

1 teaspoon ginger, minced

1 zucchini, halved lengthwise and sliced

1/2 serrano chili, sliced

6 spears asparagus, cut into 1/2 inch pieces

1/2 cup cilantro, chopped

3 green onions, chopped

1 cup frozen peas, thawed

1 packet JUST EGG folded egg or 2 eggs scrambled and cooked

Instructions

  1. Follow Right Rice packet instructions and make the rice. Super fast, it only takes 12 minutes.
  2. In a large skillet, heat 2 tablespoons olive oil over medium-high heat.
  3. Cook shallot and ginger for 1 minute.
  4. Add zucchini and sliced Serrano pepper and cook for 30 seconds. Add asparagus and 1/4 cup water. Cook for about 2 minutes to soften up the vegetables. Stir in half of the cilantro.
  5. Chop JUST egg and fold it into the mixture.
  6. Stir in RIGHT RICE and stir.
  7. Spoon into the center of a bowl and top with cilantro and green onions.
