These are the best black bean burgers I’ve ever tried between homemade, restaurant, and store-bought. I’m confident you’ll be satisfied with this bean burger recipe. They’re big, thick, hearty, and flavorful. The trick is to partially dry out the black beans, so the burgers do not taste mushy. Grill or bake the black bean burgers and enjoy on a bun, plain, or a salad.

Just for Veggies?

Ok, so it’s fair to say that there was a time when a bean burger was definitely the dry, and often very boring, alternative to a meat burger, and only the most committed vegetarians would choose one over their juicy, meaty cousins.

These days, that has (for the most part) changed. Us foodies have put time, effort and love into changing up the recipes so that the taste, and indeed texture, is so much more satisfying.

But if you are still on the fence, or even cynical, about how good a bean burger can be, then do me a favor and try this one! It is definitely not just for vegetarians (though if you are flirting with the idea of vegetarianism it might just push you over the edge!).

Dry Out Those Beans!

This is a neat chef’s trick to help you create the perfect bean burger i.e. not mushy!

Pre-heat the oven to 350F. Spread the beans out in a pan and leave them in for about 15 minutes, or until their skins start to come away. This partially dries them out and will prevent your burgers becoming mushy. It makes the texture so great.

Best Veggie Black Bean Burger

These are the best black bean burgers I’ve ever tried between homemade, restaurant, and store-bought. I’m confident you’ll be satisfied with this bean burger recipe. They’re big, thick, hearty, and flavorful. The trick is to partially dry out the black beans so the burgers do not taste mushy. Grill or bake the black bean burgers and enjoy on a bun, plain, or a salad.

Ingredients

2 (14 ounces) cans of black beans, drained, rinsed

1 Tablespoon extra virgin olive oil

3/4 cup finely chopped bell pepper

1/2 onion, finely chopped

4 garlic cloves, minced

1 teaspoon salt

1/2 teaspoon pepper

2 teaspoons ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

1 cup frozen sweet corn

1 cup bread crumbs

2 large eggs (see note for vegan substitution)

1/2 cup mayo

2 tablespoons sriracha

Arugula, for topping

Sliced tomatoes for topping

feta cheese, for topping

Instructions

1. preheat the oven to 400°F. Place beans, olive oil, bell pepper, onion, garlic, salt, pepper, cumin, chili powder, garlic powder, paprika, and corn and mix well. Bake in the oven for 20 minutes. stirring halfway through. Let cool for 10 minutes. Place in a large mixing bowl.

2. Add breadcrumbs and eggs to the mixture and combine. Make 4 patties. Heat a nonstick pan with 1-2 teaspoons olive oil over medium heat. Cook for about 3-4 minutes on each side.

3. Mix mayo and sriracha. Place the toasted bun on a plate, and top each side with spicy mayo, arugula, tomatoes, the cooked veggie patty, feta cheese, and the bun’s top. Enjoy!

    1. I use JUST egg substitute.

  2. I have made black bean burgers before which I thought were good but these were sooooo much better!! These were thick and so much like a burger. The sauce was great ! Easy to make and just DELISH! I can’t wait for leftovers for lunch tomorrow!!
