I love a good green bean casserole from scratch, except for those delicious store-bought crispy onions. While many a casserole dish can be made ahead of time, this one is best made the day of, so plan accordingly and use the bake time to work on other classic holiday side dishes like mashed potatoes. Do not forget to make my Holiday Margarita to sip on while you make this!!!

A Vegetarian Delight That Everyone will Love!

A casserole is just such a good dish to have as part of your holiday fayre, and this one in particular could be a fabulous offering for the vegetarians at your table. But everyone is going to love it so be sure to make enough to go round!

It’s Easy (you can definitely drink that margarita at the same time)

As you all know, I love food that is simple and quick to prepare but tastes like you put hours into it. And this dish fits that bill! The steps are super simple but the flavors combine so well. Your holiday guests will think you have been slaving for hours…not quickly rustling it up whilst sipping a drink or two…

Do Serve this Straight from the Oven

It might be tempting to prep this ahead of time and consider microwaving it when you are ready to serve. Do not give in to that temptation! Honestly it tastes so much better fresh from the oven, and the beans and mushrooms won’t do well with sitting and then being reheated. Your guests (and your taste buds) will thank you for it.

Best Green Bean Casserole

Stu’s Best Green Bean Casserole

Ingredients

1 lb  green beans, ends trimmed

1 tablespoon Lovely Seasoning

1 lb button mushrooms, sliced (baby bellas are good)

4 tablespoons unsalted butter

1 tablespoon olive oil

2 large sprigs thyme

1 tablespoon all-purpose flour

3/4 cup whole milk

1/2 cup heavy cream

2 garlic cloves, finely grated

1/4 cup grated Parmesan, plus extra for sprinkling

1/2 cup French’s fried onions

Instructions

  1. Preheat oven to 375°F.
  2. Steam green beans for 3-4 minutes. Set aside to cool.
  3. In a pan over medium-high heat, add 1 tablespoon olive oil with 2 tablespoons butter and cook the mushrooms for 6-8 minutes. Add in thyme during cooking and stir. Add lovely seasoning and stir.
  4. Remove mushrooms from the pan and set aside.
  5. Add the remaining tablespoon of unsalted butter and whisk in flour over medium heat. Whisk in the cream, milk, parmesan, and garlic. Let simmer and thicken. Remove the heat.
  6. In a baking dish, add green beans in two layers alternating with the cooked mushrooms. Top with cheese sauce and bake covered for 10 minutes and 10-15 minutes uncovered until bubbling.
  7. Top with crisp onions and serve.
