- Total Time: 35 minutes
- Yield: 6
Ingredients
2 tablespoons vegetable oil
4 chicken drumsticks (1 pound)
3 skinless, boneless chicken breast halves (1 1/2 pounds), each cut into 4 pieces
Kosher salt and freshly ground pepper
1/2 pound small white mushrooms, quartered
2 large Yukon Gold potato, peeled and cut into 1/2-inch dice
2 large carrots, cut into 1/2-inch dice
1 onion, cut into 1/2-inch dice
4 garlic cloves, chopped
2 tablespoons unsalted butter
1/4 cup all-purpose flour
2 1/2 cups chicken stock or low-sodium broth
4 thyme sprigs
1/2 cup heavy cream
1 tablespoon chopped flat-leaf parsley
Instructions
-
Heat a large Dutch oven over medium-high heat and add oil. Season chicken and brown in the pot in 2-3 batches. Once browned, remove the chicken and set it aside. It doesn’t need to be cooked all the way through.
-
Add mushrooms to the pot and cook for about 4 minutes until browned. Once browned, remove the mushrooms and set them aside.
-
Add onion, carrots, potatoes, garlic, and butter to the pot and cook for about 4 minutes. Then, add flour and stir until combined.
-
Pour about 1/2 cup of chicken stock into the pot and scrape the bottom of the pan to remove any brown bits.
-
Add the rest of the chicken stock, thyme, and chicken to the pot. Bring the mixture to a simmer and place the lid on top. Cook for about 10-15 minutes until the drumsticks are cooked through.
-
Remove the lid and add the mushrooms and cream. Stir the mixture and cook for an additional 2 minutes.
-
Ladle the chicken stew into bowls and finish with chopped parsley.
By following these simple steps, you’ll have a delicious and comforting one-pot chicken stew that’s perfect for any occasion. You can also customize the recipe by adding your favorite vegetables or herbs to suit your taste. Enjoy!
