Ingredients

2 tablespoons vegetable oil

4 chicken drumsticks (1 pound)

3 skinless, boneless chicken breast halves (1 1/2 pounds), each cut into 4 pieces

Kosher salt and freshly ground pepper

1/2 pound small white mushrooms, quartered

2 large Yukon Gold potato, peeled and cut into 1/2-inch dice

2 large carrots, cut into 1/2-inch dice

1 onion, cut into 1/2-inch dice

4 garlic cloves, chopped

2 tablespoons unsalted butter

1/4 cup all-purpose flour

2 1/2 cups chicken stock or low-sodium broth

4 thyme sprigs

1/2 cup heavy cream

1 tablespoon chopped flat-leaf parsley

Instructions

  1. Heat a large Dutch oven over medium-high heat and add oil. Season chicken and brown in the pot in 2-3 batches. Once browned, remove the chicken and set it aside. It doesn’t need to be cooked all the way through.

  2. Add mushrooms to the pot and cook for about 4 minutes until browned. Once browned, remove the mushrooms and set them aside.

  3. Add onion, carrots, potatoes, garlic, and butter to the pot and cook for about 4 minutes. Then, add flour and stir until combined.

  4. Pour about 1/2 cup of chicken stock into the pot and scrape the bottom of the pan to remove any brown bits.

  5. Add the rest of the chicken stock, thyme, and chicken to the pot. Bring the mixture to a simmer and place the lid on top. Cook for about 10-15 minutes until the drumsticks are cooked through.

  6. Remove the lid and add the mushrooms and cream. Stir the mixture and cook for an additional 2 minutes.

  7. Ladle the chicken stew into bowls and finish with chopped parsley.
