What I love about sweet potatoes is that when I eat them, I do not feel bad at all for doing so. I am an Irish boy, so I love my vegetables. Therefore I am utterly obsessed with this recipe. And for one thing, it’s easy! It is effortless to put together, although I will say it does take some time. Nevertheless it is well worth those extra minutes. In fact, a bit of extra time brings a lot of extra flavor!

I love roasting the garbanzo beans first as it gives them so much flavor and texture. If there is anything you take away from this recipe it is undoubtedly the crispy chickpeas. They are a surprisingly great snack to make for yourself. Delicious and simultaneously healthy.

Variation:

Omit chicken to make the dish vegetarian, or indeed the cheese to make it a vegan dish! As much as I love these ingredients, this dish can stand alone without them. Indeed, plenty of people prefer it.

Stuffed Sweet Potato Skins

I rather adore these Stuffed Sweet Potato Skins. I like to call them an elevated baked potato…a baked potato that’s overall a lot healthier.

  • Total Time: 1 hour 35 minutes
  • Yield: 4 people

Ingredients

2 teaspoons olive oil, divided

1 cup leftover rotisserie chicken

1/2 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon chipotle chili powder

1/2 teaspoon chili flakes

1/2 teaspoon kosher salt

1/4 teaspoon Pepper

2 cups chopped kale

1/2 cup shredded Parmesan

Instructions

  1. Preheat oven to 400°F. Prick sweet potatoes with a fork all over and rub with some olive oil. PLace on a baking sheet and bake for 1 hour.
  2. Meanwhile, toss the other teaspoon of olive oil with the chickpeas and spices, salt and pepper. Roast on a tray in the oven for 20-30 mins until crispy. Set aside.
  3. Reduce heat to 350°F. Remove potatoes from the oven, slice in half and scoop out half of the potato and stuff with kale, top with chicken, chickpeas, and cheese and place back in the oven for another 5-6 minutes. Serve with an extra drizzle of olive oil.
