Chicken Marsala is an Italian-American dish of golden pan-fried chicken cutlets and mushrooms in a rich Marsala wine sauce. Though it’s a classic restaurant dish, it’s really easy to make at home. With just one pan, you can have it on the dinner table in under 30 minutes.

Quick, Easy and Ridiculously Tasty

Ok, so if you know anything about me you’ll know that while I love food that tastes amazing, I love it even more when it didn’t take me hours to cook. Yes, sometimes spending hours in the kitchen preparing for a special meal or event can be fun. But often I just like to get in there, get those ingredients on the go, and then slap the perfect dish on the table not long after. Sound like your bag, too? Then absolutely stick around for this recipe…

Oooo Those Flavors!

So what this dish lacks in fuss and bother, it makes up for in taste. The creamy sauce is just to die for, and the cream that goes into it balances out the kick of the wine beautifully.

Wait…what wine? Just a House White, right?

Erm, wrong! Marsala wine is a fortified wine made in Sicily. Whilst you can get very sweet Marsala wine if you go looking, for this recipe I’d strongly suggest using a dry Marsala wine. Oh and top tip before you go traipsing round the wine aisles in search of your Marsala: if it’s not there you’re going to find it with the vinegar (thank me later!).

PERFECT CHICKEN MARSALA

Chicken Marsala is an Italian-American dish of golden pan-fried chicken cutlets and mushrooms in a rich Marsala wine sauce. Though it’s a classic restaurant dish, it’s really easy to make at home. With just one pan, you can have it on the dinner table in under 30 minutes.

  • Total Time: 25 minutes

Ingredients

4 chicken thighs, boneless and skinless

1/4 cup flour

1 teaspoon salt

1/2 teaspoon pepper

2 tablespoons olive oil

2 tablespoons unsalted butter

8 oz sliced baby Bella mushrooms or button mushrooms

4 cloves garlic, roughly chopped

1 shallot, minced

1/2 cup marsala wine

1/2 cup chicken broth

1/4 cup heavy cream

1 tablespoon chopped fresh thyme

1 tablespoon chopped fresh parsley

Cooked rice or pasta, for serving

Instructions

1. Place flour, salt, and pepper, chicken in a Ziploc bag, close, and shake.

2. Heat oil and 2 tablespoons butter in a nonstick pan over medium-high heat, and cook chicken for 2-3 minutes on each side. Set aside on a plate.

3. Add remaining butter, add mushrooms and cook for 5 minutes. Add shallot, garlic and cook for 2 minutes.

4. Add in marsala and simmer for 1 minute. Add broth and cream. Simmer to thicken for 4-5 minutes. Add in thyme. Stir.

5. Add back in the chicken and simmer for about 5 minutes in the sauce.

6. Place a mound of rice in the middle of the plate, top with two thighs and extra sauce. Sprinkle with parsley. Serve.
