This Weeknight Green Vegetable Chicken Pasta is such a great and simple recipe to make for you or your family any night of the week.

So any of you who know my work know that I just love food that is quick and easy to prepare, but which still packs a punch when you taste it. This pasta dish is certainly no exception. You have it made in no time, and furthermore it tastes like a dream. It’s surely going to be your go-to dish when you want fresh, healthy and tasty in just over ten minutes.

What’s With the ‘Weeknight’?

Well, surely that’s when you want speedy food the most! The Italians love food, but they also love socializing, spending time with family, eating together and laughing. Basically, good times and good food don’t always have to mean that someone is slaving away in the kitchen for hours on end. So if you’re looking for a dish that allows you to spend that little bit of extra time with family…or indeed to yourself…this is it! Now, of course, I am not saying you can’t make it on the weekend…but I bet it’s going to become much more Monday to Friday for you. But who knows?!

It’s a Fettuccine dish…is the Fettuccine a must?

So you can feel free to switch out the Fettuccine for a different pasta if you like. (Or indeed, if you happen to have a different sort of handy and running to the shops is a pain!) I love using Fettucine in this dish as the shape, size and texture work markedly well with this dish. But I know friends who have children who are very fussy about which pasta shapes they eat. Certainly, don’t stress about it! Swap it out…also just make sure you cook it for the right length of time.

Regardless, I do recommend using a pasta from a decent range if you can. Because some of the very cheap bags of dried pasta are too thick and make the dish a bit heavy. But at the end of the day, it’s a weeknight, and you want that meal fast…so go ahead and use what you’ve got!

Weeknight Green Vegetable Chicken Pasta

This Weeknight Green Vegetable Chicken Pasta is such a great and simple recipe to make for you or your family any night of the week.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

3/4 lb fettuccine pasta

1/2 cup pistachio nuts, toasted and chopped

2 teaspoons olive oil

1 zucchini, halved lengthwise and sliced 1/4 inch pieces

6 asparagus spears, trimmed and cut into 1/2 inch pieces

1/2 teaspoon kosher salt

1 cup frozen peas, thawed

1 cup heavy cream

1 cup grated parmesan cheese

juice of 1 lemon

2 cups shredded rotisserie chicken

1 cup basil leaves, chopped

Instructions

  1. Bring a pot of water to a boil and season with 2 tablespoons of kosher salt.
  2. Heat a medium non-stick skillet over medium heat and toast pistachios for 2-3 minutes. Remove and set aside to cool.
  3. Heat oil in the same skillet over medium heat and cook the zucchini and asparagus for 3-4 minutes, season with salt. Add peas and stir for 1 minute. Remove green vegetables into a bowl.
  4. Add pasta to the pan along with the cream, paremsan and lemon juice. Toss to combine all ingredients. Add back in the green vegetables with the rotisserie chicken and toss again. Stir in chopped basil.
  5. Roughly chop pistachios and sprinkle into the pan.
  6. Serve in 4 bowls. Enjoy!
