I love chopped salads, and I of course love Italian food! This Vegetarian Italian Chopped Salad is a great side salad, or also grand for a large BBQ.

Vegetarian Italian Chopped Salad

The salad is generally pretty simple to throw together. I in fact used to order a version of this salad from a restaurant in Beverly Hills. I added a few little things, of course, and my homemade Italian vinaigrette is the best.

There are a lot of meat recipes on my blog, and indeed that’s ok. But I wanted to start doing some vegetarian recipes that you can also top with your favorite protein if you wish. Generally, these salads have a lot of salami, prosciutto, etc. on them. For example, I ate this salad with some leftover chicken I had in the fridge. As a tasty base dish, it is undeniably versatile.

Additions for this Vegetarian Italian Chopped Salad

  • firstly, for meat-eaters, sliced chicken breast, poached salmon, grilled shrimp or even grilled steak
  • secondly, kalamata olives offer a great twist
  • parmesan cheese also adds extra flair
  • also consider cucumbers for an extra refreshing edge
  • My roasted chickpeas right here 

When it comes to adding cheese to this Salad, either use parmesan or provolone. I generally like provolone as its taste is pretty mild, and there is a ton of flavor in this Salad. As long as you got this basic recipe, you can mix and match it up! Chiefly, have fun experimenting. You can’t go too far wrong, as long as you surely have the key ingredients right.

Vegetarian Italian Chopped Salad

I love chopped salads, and I of course love Italian food! This Vegetarian Italian Chopped Salad is a great side salad, or also grand for a large BBQ.

  • Yield: 4-6 people

Ingredients

3 heads romaine lettuce, finely chopped

½ head of radicchio, thinly sliced

3 ribs celery, chopped

10 cherry tomatoes, halved

1/2 cup sliced pickled pepperoncini peppers in a jar

1/2  cup oil-packed sun-dried tomatoes, rinsed and roughly chopped

1 cup diced cucumber

Roasted Chickpeas right here for the recipe

1 cup provolone cheese  or grated parmesan

Italian Vinaigrette

1/4 cup extra virgin olive oil

1/4 cup red wine vinegar

1 tablespoon dried oregano

1 clove garlic, minced

1/4 teaspoon fresh ground black pepper

1/4 teaspoon kosher salt

1/4 teaspoon red pepper flakes

Instructions

  1. Prepare all salad ingredients and place them in a large bowl.
  2. When ready to serve, toss all the ingredients with the dressing and serve, top with the roasted chickpeas.
