Vegetarian Italian Chopped Salad

I love chopped salads, and I of course love Italian food! This Vegetarian Italian Chopped Salad is a great side salad, or also grand for a large BBQ.

  • Yield: 4-6 people

Ingredients

3 heads romaine lettuce, finely chopped

½ head of radicchio, thinly sliced

3 ribs celery, chopped

10 cherry tomatoes, halved

1/2 cup sliced pickled pepperoncini peppers in a jar

1/2  cup oil-packed sun-dried tomatoes, rinsed and roughly chopped

1 cup diced cucumber

Roasted Chickpeas right here for the recipe

1 cup provolone cheese  or grated parmesan

Italian Vinaigrette

1/4 cup extra virgin olive oil

1/4 cup red wine vinegar

1 tablespoon dried oregano

1 clove garlic, minced

1/4 teaspoon fresh ground black pepper

1/4 teaspoon kosher salt

1/4 teaspoon red pepper flakes

Instructions

  1. Prepare all salad ingredients and place them in a large bowl.
  2. When ready to serve, toss all the ingredients with the dressing and serve, top with the roasted chickpeas.
