Let’s be honest, life can be a bit of a mess from time to time. It can be exhausting, so a nice simple recipe is what we need. This is a spin on the Strawberry Eaton Mess, which is a popular dessert where I’m from. A mixture of cream, meringue, and strawberries, it’s painless to prepare. Strawberries and raspberries are my choices of fruit, but feel free to change this up to your own whims and taste. This recipe is from my cookbook.
Strawberry Eton mess is a traditional English dessert consisting of a mixture of strawberries, meringue, and whipped cream.
First mentioned in print in 1893, it is commonly believed to originate from Eton College and is served at the annual cricket match against the pupils of Harrow School.
What is an Eaton mess?
Eton mess is a mixture of just three ingredients: meringue, strawberries, and whipped cream. Think of it as a different type of strawberry shortcake — crunchy meringue cookies stand in as a delicious alternative to cake, and instead of stacking, you get to toss everything together like a big old mess. what could be easier than this strawberry Eaton mess?
Tips:
- Do not make your own meringue. Go to the store and you can buy meringue cookies. Trader Joes always has them.
- Buy fresh whipped cream and whip it fresh. I do not want to see any of that Reddi whip, even if it is super tasty. If you use can cream it flattens fast and does not stay together.
- If your strawberries are not super perfect, slice them in half and toss them in some sugar and let them rest for an hour or so.
- Toss in a crunchy nut and toss with mint also.

Ingredients
2 cups heavy whipping cream
6 cups lightly crushed store-bought meringues
2 cups strawberries, rinsed, stems removed and halved
2 cups raspberries, rinsed
½ cup shelled unsalted pistachios, roughly chopped
1/4 cup fresh mint leaves, chopped
Instructions
- Whip cream to form soft peaks. Set aside.
- Place crushed meringues into a large bowl.
- Sprinkle with the berries of choice and mix. Top with any remaining berries, and finally, whipped cream.
- Top with chopped pistachios and mint.
