Ingredients
1 packet Fried Right Rice
2 tablespoons olive oil
1 shallot, minced
1 teaspoon ginger, minced
1 zucchini, halved lengthwise and sliced
1/2 serrano chili, sliced
6 spears asparagus, cut into 1/2 inch pieces
1/2 cup cilantro, chopped
3 green onions, chopped
1 cup frozen peas, thawed
1 packet JUST EGG folded egg or 2 eggs scrambled and cooked
Instructions
- Follow Right Rice packet instructions and make the rice. Super fast, it only takes 12 minutes.
- In a large skillet, heat 2 tablespoons olive oil over medium-high heat.
- Cook shallot and ginger for 1 minute.
- Add zucchini and sliced Serrano pepper and cook for 30 seconds. Add asparagus and 1/4 cup water. Cook for about 2 minutes to soften up the vegetables. Stir in half of the cilantro.
- Chop JUST egg and fold it into the mixture.
- Stir in RIGHT RICE and stir.
- Spoon into the center of a bowl and top with cilantro and green onions.
