What’s not to love about these little potatoes? Roasting fingerlings in the oven cut out time, waste, and mess. You don’t have to peel the potatoes, nor do you have to heat up a big pot of splatter-happy oil. All you have to do is rinse them off, slice them lengthwise, and pop them in the oven! Pair them with your favorite dip, or eat them on their own. The choice is yours and they taste great every time.

Why Fingerling Fries?

So, initial answer is go ahead and make them, and you will work out why…! They just taste so good, and there is something about the texture of a fingerling that sets it apart from other potatoes. However, they are also low in starch, so many people consider them a healthier alternative to regular potatoes. Additionally, you’ll find the shape of a fingerling is just perfect for making fries. They slice so easily that they are actually a joy to cut.

What to Pair These Crispy Fingerling Fries With…

  • If you’re serving them as a snack, a simple sauce or dip will do. I have a friend who just won’t eat any sort of fries without ketchup, while I go mad for mayonnaise on them. However you can absolutely go fancier. Check out my Beet and Yoghurt Dip for something extra special.

Crispy Fingerling Fries

Ingredients

16 fingerling potatoes, about three inches long, sliced lengthwise
2 tablespoons olive oil
1 teaspoon kosher salt
¼ cup freshly grated Parmesan cheese
1 tablespoon fresh thyme leaves

Instructions

  1. Preheat oven to 425˚F. Place a rimmed 18 x 13-inch baking sheet in the oven and heat up for 10 minutes.
  2. Meanwhile, toss potatoes in a bowl with olive oil and salt. Using your hands, mix well to make sure the potatoes are covered in the salted oil.
  3. Remove the piping hot pan from the oven and pour the potatoes onto the tray. They will begin to sear and cook. Shake the tray to ensure there is no overlapping.
  4. Roast in the oven for 25 minutes, tossing potatoes halfway through with a heatproof spatula.
  5. Remove the tray from the oven and let potatoes cool for 5 minutes.
  6. Sprinkle potatoes with Parmesan and thyme leaves. Serve.
