Berry Date morning parfait. I love making this parfait and popping it in the fridge so I have it for the next morning. I will make a couple at a time. It is fruity, chocolatey, and slightly chewy with the nuts and California Dates.

Tips when making this Date Parfait

  • let your fruit cool completely before building the parfait
  • You can use dairy alternatives to the greek yogurt
  • Fresh fruit is always better for your Berry Date morning parfait but during the winter months, frozen berries are great!
  • Try using some different nuts for the brownie crumble

Other fruits you can use:

  • blackberries
  • strawberries
  • blueberries
  • peaches
  • grapes
  • kiwis
  • mandarin oranges

Mixed Berry and Date morning parfait

Mixed Berry and Date morning parfait It is fruity, chocolatey, and slightly chewy with the nuts and California Dates

  • Total Time: 20 minutes
  • Yield: 2 servings

Ingredients

3 cups frozen mixed berries

1 tablespoon plus 1 teaspoon maple syrup

Juice 1 lemon

1 tablespoon cornstarch

1/2 cup water

1 cup walnuts

1/2 cup cocoa powder

6 Medjool dates, pitted

1/2 teaspoon kosher salt

1/2 cup sliced almonds

2 cups greek yogurt

Instructions

  1. In a medium nonstick pan over medium heat, place berries 1 tablespoon maple syrup, lemon, cornstarch, and water and simmer for 10 mins or until thickened.
  2. in a food processor, pulse walnuts, cocoa powder, dates, salt, and almonds together. Press into a brownie pan or a bowl to pack the mixture. Place in the freezer for 10 minutes.
  3. Mix yogurt and 1 teaspoon maple syrup together.
  4. Start to layer the ingredients into a large wine glass or a milkshake glass (as shown), brownie mixture, yogurt, brownie crumbles, berries and yogurt, and repeat and top with almonds to finish.
