These No-Bake Date Crisp Cookies are probably the most addictive things I have ever made (so far!).  All the good stuff and of course they have an extra bit of chewiness with those California Dates. Chewy, crisp, and sweet…so say hello to my No-Bake Date Crisp Cookies.

No Bake Date Crisp Cookies

No-Bake Date Crisp Cookies are undeniably my go-to cookies. Because of its short and sweet ingredients list and having no baking involved, they are a perfect after-dinner snack for every day of the week.

It’s no news that I like using dates in my recipes and here is another one. Remember, there is certainly no such thing as over-buying dates. For one thing, you’ll find plenty of recipes here to put them to good use and get the best out of all the dishes. The date cookies have the perfect chewiness and a crisp texture as a result of the pecans and Rice Krispies. Just one bite and you’ll surely be hooked!

So Are Dates a Healthy Sweet Treat?

Let’s be honest, I haven’t created these cookies with this in mind. I just love them, and as long as I love the taste of something I will make it!

But, it’s worth bearing in mind that dates are a source of fructose, which is a natural type of sugar found in fruit. Thus the sweetness you are getting from the dates is healthier than white sugar, for example. Of course, there is sugar in this recipe, which is why I’m going to stop short of saying these are particularly healthy. But overall, if you are looking for an ingredient to include in your diet which will satisfy your sweet tooth in an overall more healthy way than refined sugar…well, then dates are a great way to go! Indeed, they are also a great source of potassium, magnesium and zinc. Oh, not to mention phosphorus, calcium and vitamin B3. What’s more, they can be used brilliantly in both sweet treats and savory dishes.

Why Medjool Dates?

Ok, so I am suggesting you use Medjool dates for these cookies for several reasons. Firstly, they are one of the most flavorsome types of date. Additionally, they are large and soft, so just work so well. Furthermore, they are never processed. Plus overall they tend to have a delicious caramel-type taste. So delicious!

I’ve bought too many dates and I’m not going to use them…help!

So long as you can see this website, you won’t have too many dates! I have loads of date recipes, so check them out and find yourself some other interesting dishes and treats to cook. But you can also store your dates in the fridge. They will last up to about 30 days so long as they are stored in an airtight container. Additionally, you have the option to freeze them. So honestly, you’re going to be fine! Plus I bet you fall in love with these cookies and want to make another batch straightaway.

No Bake Date Crisp Cookies

These “Cookies” are probably the most addictive things I have ever made. Especially, because they are chewy, crisp, and sweet. All the good stuff and of course they have an extra bit of chewiness with those California Dates.

  • Total Time: 15
  • Yield: 12 cookies

Ingredients

1/2 stick unsalted butter

4 Medjool dates, pitted and chopped

1 cup sugar

1 egg

1 teaspoon vanilla extract

1/2 cup pecans, chopped

2 cups Rice Krispies

2 cups shredded coconut

Instructions

  1. In a large pot over medium heat, melt butter and add dates and stir for one minute.
  2. To the pan add sugar and stir, whisk in egg and keep stirring for 1-2 minutes.
  3. Add vanilla, pecans, and Rice Krispies and stir to combine for 1 minute. Turn off the heat and Let cool for 5 minutes.
  4. Using an ice cream scoop, scoop into wet hands and roll to form a ball, roll in the coconut and press to form a cookie. Repeat with remaining mixture. Let set for 30 minutes.
