Sumac Roasted Strawberries with Lemon yogurt

Strawberries just say summer, and undeniably they are a firm favourite with many people. However picking them up just ripe can be tricky, especially if you are not in a region where they are readily grown.

Sumac is a tangy spice, made from the wild sumac flower, and so adds a real zing to this dessert. This means that you can happily prepare this even if you are working with fruit that wouldn’t be perfect on its own.

Sumac Roasted Strawberries with Lemon yogurt

  • Total Time: 95 minutes
  • Yield: 6 people

Ingredients

1 lb strawberries (cleaned and halved)

1 cup fresh mint (chopped thinly)

2 tablespoons sumac

1 tablespoon vanilla extract

3 1/2 cups greek yogurt

1/2 cup powdered sugar

1 lemon (zested and juiced )

1/4 cup heavy cream

1 tablespoon of sea salt

Instructions

  1. Preheat oven to 425°F
  2. Toss 1/2 cup water, strawberries, sumac, 1/2 of the chopped mint and vanilla on a baking tray and roast in the oven for 25 mins.
  3. Mix Greek yogurt, sugar, lemon zest, juice, salt and cream, let set in the fridge for 1 hour. Spoon into glasses. Cream, berries, cream berries. Top with mint Enjoy!
