This Easy Avocado Toast Red Cabbage and Egg is a really nice elevated version of the regular avocado toast. The tangy red cabbage gives such a nice texture to this dish.

Living in California, we get so many superb avocados. Therefore Avocado Toast is almost part of the staple diet. I love it, however of course sometimes too much of any dish gets a bit boring. Thus I decided to jazz up a simple version, accordingly adding in red cabbage and egg to create something a little bit more unusual. All in all I think you’re going to love it. Avocado toast red cabbage and egg

This Easy Avocado toast red cabbage and egg is a really nice elevated version of the regular avocado toast. The tangy red cabbage gives such a nice texture to this dish.

Ingredients

4 slices sourdough bread, toasted

1 avocado, pitted

1 teaspoon lemon juice

1/4 teaspoon red pepper flakes

1/4 teaspoon salt

pinch of pepper

1/2 small head red cabbage, shredded

2 teaspoon red wine vinegar

1 cup JUST egg or 4 eggs, scrambled

Cilantro leaves for garnish

Instructions

  1. Toast bread and set aside.
  2. Mash avocado with salt, pepper, chili flakes and lemon juice. Set aside.
  3. Toss red cabbage with vinegar and let sit for 10 minutes to absorb.
  4. Scramble eggs and season with salt and pepper.
  5. Spread avocado mixture over toast, top with cabbage, egg and finally top with some cilantro leaves.
