Ingredients
4 slices sourdough bread, toasted
1 avocado, pitted
1 teaspoon lemon juice
1/4 teaspoon red pepper flakes
1/4 teaspoon salt
pinch of pepper
1/2 small head red cabbage, shredded
2 teaspoon red wine vinegar
1 cup JUST egg or 4 eggs, scrambled
Cilantro leaves for garnish
Instructions
- Toast bread and set aside.
- Mash avocado with salt, pepper, chili flakes and lemon juice. Set aside.
- Toss red cabbage with vinegar and let sit for 10 minutes to absorb.
- Scramble eggs and season with salt and pepper.
- Spread avocado mixture over toast, top with cabbage, egg and finally top with some cilantro leaves.
