I love a lettuce cup, especially the ones you get at Asian restaurants. In these Buffalo Cauliflower Lettuce Cups, I love the freshness and crunch factor.

These Buffalo Cauliflower Lettuce Cups are healthy, delicious, and would undoubtedly make a great addition to your game day spread. Honestly, I love meat, however I don’t miss the meat in these as there is so much other flavour. Additionally they taste so fresh! The blue cheese adds just that right amount of kick but without overkill. The strong flavour is off-set by the mild lettuce taste, and certainly isn’t overpowering.

What is Butter Lettuce?

  • Butter lettuce is known for its mild flavour, sweet leaves. You can get two varieties: Bibb and Boston lettuce.
  • It is called butter lettuce as it melts in the mouth like butter! I personally find it delicious, and the leaves really do make the perfect cups for this dish.

Buffalo Cauliflower Lettuce cups

Buffalo Cauliflower Lettuce cups

  • Total Time: 25 minutes
  • Yield: 4

Ingredients

1 head cauliflower, broken into bite-size florets
2 tablespoons olive oil
1/4 cup @franksredhot buffalo sauce
1 head butter lettuce
Blue cheese crumbles for toppings
Ranch dressing
Diced celery for toppings

Instructions

  1. Preheat the oven to 425°F.
  2. Toss with olive oil, and spread evenly on the baking sheet. Bake for 15-20 minutes or until they are roasted to your liking.
  3. In the meantime, heat the buffalo sauce in a saucepan over low heat. When the cauliflower is ready, toss with the sauce.
  4. Pull off full leaves from the head of butter lettuce. Add the buffalo cauliflower mixture to each cup. You will have enough for about 6 cups and probably more depending on how full you want to make them.
  5. Top with a drizzle of ranch, a few spoonfuls of bleu cheese, and/or some diced celery. Enjoy!

Notes

This can also be made in your air fryer.
