Try this combination of cheeses and the process for buttering and cooking the toast and you will be known for your Grilled Cheese Sandwiches. All you need is a Creamy Tomato Soup to dunk your sandwich into.

Ingredients

2 slices country bread or sourdough (good quality)

1/2 cup shredded gruyere cheese

1/2 cup shredded sharp cheddar cheese (I like Dubliner aged Cheddar)

1/2 cup grated parmesan cheese

3 tablespoons Kerrygold butter

2 tablespoons mayonnaise

Instructions

  1. Spread the inside of each slice of bread with 1 tablespoon of butter.
  2. Top each slice of bread with the gruyere and the cheddar.
  3. Fold both pieces into each other to resemble a sandwich. Spread the parmesan cheese onto a plate.
  4. Spread the exterior of each slice with mayonnaise and dip each side into the parmesan cheese.
  5. Heat 1 tablespoon of butter in a cast iron skillet over medium to low heat.
  6. Place sandwich on the cast iron skillet and press down using a spatula. Cook for about 2-3 minutes each side. You want a nice golden brown to deep brown color. NOT BURNT. Flip and repeat.
  7. Enjoy my Tomato Basil Soup along with this delicious sandwich.
