Ingredients
2 slices country bread or sourdough (good quality)
1/2 cup shredded gruyere cheese
1/2 cup shredded sharp cheddar cheese (I like Dubliner aged Cheddar)
1/2 cup grated parmesan cheese
3 tablespoons Kerrygold butter
2 tablespoons mayonnaise
Instructions
- Spread the inside of each slice of bread with 1 tablespoon of butter.
- Top each slice of bread with the gruyere and the cheddar.
- Fold both pieces into each other to resemble a sandwich. Spread the parmesan cheese onto a plate.
- Spread the exterior of each slice with mayonnaise and dip each side into the parmesan cheese.
- Heat 1 tablespoon of butter in a cast iron skillet over medium to low heat.
- Place sandwich on the cast iron skillet and press down using a spatula. Cook for about 2-3 minutes each side. You want a nice golden brown to deep brown color. NOT BURNT. Flip and repeat.
