Dates energy bites are incredibly versatile and make a rather delicious snack. They are often paired with other foods, such as almonds, nut butter, or soft cheese. These Date energy bites are so great for a little energy boost in the afternoon or even in the morning before you work out.

As I get ready for the INDIAN WELLS tennis tournament, I will be working alongside the CALIFORNIA DATE commission on some particularly great events! And I indeed cannot wait. This will be with my tomato soup…and moreover with the help of a Tennis player! The Tennis player is TBD, but I am so excited. Date energy bites

These Date Chocolate Pistachio Balls are so great for a little energy boost in the afternoon or even in the morning before you work out.

  • Total Time: 30 mins

Ingredients

10 California Medjool dates, pitted

½ cup bittersweet chocolate chips, 60% Cocoa

1/2 cup pistachios, ground for rolling

Instructions

  1. In a food processor, pulse the pistachios until finely ground.
  2. In a food processor, pulse dates and chocolate chips together until it forms a paste ready for rolling. Roll into a 2-tablespoon ball.
  3. Roll date balls in the pistachios. If you want, you can also pipe icing onto the ball to resemble a tennis ball.
