Sushi restaurants often offer shrimp stacks or towers on their menu. They are a layered mix of rice, shrimp, avocado, and cucumber. The flavors blend together to create a mellow dish that’s a refreshing go-to when the weather heats up. These towers aren’t something most of us would attempt to make in our own kitchen, but they are an easy dish to create. I think it’s the layering factor that seems tricky to most people.  But all you’ll need is a measuring cup to create the perfect-sized tower.

Make Your Presentation Tower Above the Rest

So whilst I don’t believe that presentation is everything with food (let’s be real…it’s the taste!), I do also love a good looking dish. When food is presented well it adds wow factor to the meal. It can make for great talking points at parties, and can turn the serving of a standard dish into something of an occasion. While this Spicy Avocado Shrimp Tower is far from standard, the combination of great tasting food along with exquisite presentation will have your guests talking about your dinner party long into the future.

A Word About Spray Oil…

In the recipe for this Spicy Avocado Shrimp Tower I mention spray oil. Guys…this is important! The light, even layer of oil that you spray into the cup is what’s going to help the tower to come out fully formed, without breaking. Don’t try to cheat by swilling oil around…the dish will come out oily and most likely broken. Spray oil is your friend here…do not start prepping without it!

Spicy Avocado Shrimp Tower

These towers aren’t something most of us would attempt to make in our own kitchen, but they are an easy dish to create. Ingredients

45 cooked shrimp, diced

1 teaspoon mayo

1/2 teaspoon Siracha

1/2 cup arugula leaves

1/2 cup diced cucumber

1/2 large avocado

1/4 cup cilantro, chopped

1/2 teaspoon sesame oil

1/4 cup cooked rice

Garnish:

Sesame seeds

Crispy onions

Instructions

1. Mix shrimp, mayo, siracha, and arugula leaves in a bowl.

2. Smash avocado, salt, pepper, sesame oil, and cilantro together.

3. Spray a 1 cup measuring cup with oil, place shrimp mix in first, and press down with a spoon, followed by cucumber, avocado mix, and finally the rice.

4. Flip over and turn out onto a plate. Top with sesame seeds and crispy onions.
