Homemade Chicken and Dumplings

Growing up in Ireland for most of my life, my mother would make this dish at least once a week, especially in those colder months, which is all year round in Ireland. The recipe she finally gave me after many phone calls for her to tell me. So, you know the thing about parents? They do not write anything down (at least, mine don’t!). Below are some common questions to help you out when making these. I just ate two bowls of this as I am simultaneously writing! I so need to stop eating LOL.

Can I use dried herbs instead of fresh for this recipe?

Yes, you can use dried herbs instead of fresh. Dried herbs give a more potent flavor so that I would reduce by half.

How can you tell when dumplings are done?

If you grab a toothpick, you can tell if they are done when it comes out clean. Just like when you bake a cake!

Can I overcook dumplings?

Yes, you can indeed overcook them. They will in fact start to break apart if you have cooked them too long. However stick to the recipe, and you will be all good!

Homemade Chicken and Dumplings

This recipe is super easy to make, it will be a household winner every time you make it. These Homemade Chicken and Dumplings stew type dish is loaded with big fluffy dumplings that are made with only 4 ingredients.

  • Yield: 6-8 servings

Ingredients

3 tablespoons butter

2 tablespoons canola oil

1 cup all-purpose flour

4 chicken breasts, bone-in, skin on

4 chicken thighs, bone-in, skin on

Salt And Pepper

2 carrots, diced

2 celery stalks, diced

1 yellow onion, diced

1 tablespoon ground thyme

1/2 tablespoon ground Turmeric

8 cups low sodium Chicken Broth

1 cup heavy cream

 

for the Dumplings:

2 cups All-purpose Flour

4 teaspoons baking powder

1 teaspoon Kosher Salt

3/4 cup whole milk

4 tablespoons canola oil

2 tablespoons fresh parsley, minced

Instructions

  1. Season chicken with salt and pepper, place in flour and completely coat. 
  2. Heat oil and butter in a heavy-based pot over medium-high heat. Brown chicken all over. This may take you two batches. Set aside on a platter. (Do not cook the chicken all the way through, we just want it browned)
  3. In the same pot, add carrots, celery, and onion and cook for about 7 minutes until softened. Add thyme and turmeric and stir well to coat the vegetables. 
  4. Add in the chicken broth, bring to a simmer. Add back in the chicken. Cover and simmer for 15-20 minutes. Meanwhile, let’s make the dumplings. Combine all dumpling ingredients and set aside.
  5. Remove chicken from pot and using a fork to remove skin and discard. Shred using two forks, it will be hot so be careful. 
  6. Add chicken back to the pot (this seems like a process but it’s well worth it) along with the cream and stir. 
  7. Drop tablespoon amounts of dough into the pot until all used up. Cover and simmer for 12-15 minutes until dumplings are cooked through. Season to taste.  
  8. Scoop into bowls and sprinkle with chopped parsley.
