Inspired by my love of meatballs and chicken curry, I decided to combine most of the flavors that go into my chicken curry in order to create this delicious Curry Chicken Meatballs recipe.
Tips for making these curry chicken meatballs:
- do not overwork the meat, because you do not want a dry, dense meatball
- mix flavor ingredients first before adding it to the meat, as soon as you are finished mixing, form the meatball and let them firm up in the fridge.
- use an ice cream scooper to make even meatballs, so they cook evenly
I love all meatballs, and generally I pretty much have them every week. However, sometimes it is nice to switch it up. Growing up in Ireland, you surely couldn’t find ground chicken anywhere. The first time I saw it was when I came to the USA years ago. It’s so lovely to be able to find this chicken meat in the stores. So basically, anywhere you have ground beef in a recipe, thereafter you can swap it out for ground chicken.
So, my favorite Indian take out dish is a chicken curry. The taste of it and the recipe has so much flavor. I therefore thought that by combining all those wonderful flavors that you get in chicken curry and making meatballs, I would get the same great taste. Indeed, you know what? It works so so good. Delicious, in fact! Besides, this recipe makes a lot of meatballs so that you will have plenty for lunch the next day. When cooking these, I love to use my favorite non-stick pans. They are undoubtedly the way to go.
