What is it about my easy beef stroganoff that makes it so good?
This dish tastes better because it is so fast to come together. Basically, grab a bag of cauliflower rice at the store, pop into the microwave, and you got your rice side in a few minutes. Surprisingly simple yet impressive.
I think this dish tastes so good because it brings me back to my childhood in high school. I did Home Economics in high school, and this was in fact one of the first dishes that we made. When we made it in high school, we used sliced beef, not ground. At this point I wasn’t yet changing ingredients up, but now? I of course like the crumbled ground beef mixed in the creamy sauce at the end. It is so decadent! This dish can be made on a Sunday and put placed in a freezer container therefore you got a few dinners for the week. It still tastes undeniably great later.
In conclusion, this is a dish that appears fancy but won’t take it out of you cooking it. In fact, you will keep coming back to it as a fantastic, easy go-to.
Tips for making this Easy Beef Stroganoff
- I always like to use 15% fat in the beef. In brief, it will add more flavor and won’t dry out.
- Use can use dried thyme in case you cannot find fresh.
- Pop in a 1/2 teaspoon of chili flakes if you want a little heat in this (from time to time I do!)
- Serve it with mashed potatoes, for example, or rice or egg noodles.

Ingredients
3 tablespoons butter, divided
1 teaspoon olive oil
1 lb. ground beef, 85/15% lean
1 teaspoon Kosher salt
1/2 teaspoon freshly ground pepper
2 lb. mushrooms, sliced
2 garlic cloves, minced
1 teaspoon freshly chopped thyme leaves
1 cup low-sodium beef stock
4 oz. cream cheese
1/2 cup sour cream
1 tablespoon Worcestershire sauce
2 teaspoons Dijon mustard
parsley, for garnish
cauliflower rice, for serving
Instructions
- Heat 1 tablespoon butter and oil in a large skillet over medium-high heat, cook beef for about 8-10 minutes until cooked through, season with salt and pepper, remove and set aside.
- Place the remaining two tablespoons of butter to the pan and add mushrooms and cook until mushrooms begin to brown. Add garlic and thyme and stir for 1 minute.
- Add beef stock, cream cheese, sour cream, Worcestershire, and dijon mustard to the skillet. Let simmer for 2 minutes. Add back in the beef and stir to combine, sprinkle with parsley.
- Serve over cauliflower rice.
