Ingredients
3 russet potatoes, cut into 1/4-inch slices
3 tablespoons unsalted Kerrygold butter or reg butter
2 tablespoons Greek Goddess seasoning or 1 tablespoon salt and pepper
8 slices bacon, cooked and crumbled
1 cup shredded Dubliner Cheddar cheese
1 cup sour cream
3/4 cup pico de gallo or salsa
4 green onions, chopped
1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 420°F.
- Wash and cut russet potatoes into 1/4-inch thick slices. Melt butter in a saucepan, and add to potatoes in a bowl along with the seasoning and toss well.
- Lay out potatoes on a lined baking sheet and bake for 30 mins or so until the potatoes are brown and crisp. Let cool.
- Arrange potatoes in an oven-proof skillet and top with cheddar cheese, place in the oven for 5-7 minutes to melt the cheese.
- Top with salsa, green onions, bacon, and cilantro. Place sour cream in a small bowl in the center.
