Ingredients
2 slices thick-cut bacon
2 slices heirloom tomato
4 heirloom tomatoes
3 butter lettuce leaves
2 tablespoons mayo
2 tablespoons grated parmesan cheese
2 slices sourdough bread
Instructions
- Place the slices of bacon in a cold skillet and turn the heat to medium. Cook bacon until crispy on each side, about 4-5 minutes per side.
- Remove grease from the pan and wipe clean. Spread mayo on one side of the bread, sprinkle with parmesan, and press onto the bread. Cook on a medium-heated skillet until crispy, 2-3 minutes. Set aside.
- Assemble the sandwich as follows, spread more mayo inside on both slices, top with tomatoes, sun-dried tomatoes, lettuce, bacon, and finally, the other slice of bread with the parmesan crust on the outside.
