Double Crunch BLT

This BLT is not like your regular BLT, I am doubling up on the tomato goodness and adding some tasty sun-dried tomatoes in there too! and also the outside crust is layered with mayo and parmesan to achieve the best exterior crust.

Ingredients

2 slices thick-cut bacon

2 slices heirloom tomato

4 heirloom tomatoes

3 butter lettuce leaves

2 tablespoons mayo

2 tablespoons grated parmesan cheese

2 slices sourdough bread

Instructions

  1. Place the slices of bacon in a cold skillet and turn the heat to medium. Cook bacon until crispy on each side, about 4-5 minutes per side.
  2. Remove grease from the pan and wipe clean. Spread mayo on one side of the bread, sprinkle with parmesan, and press onto the bread. Cook on a medium-heated skillet until crispy, 2-3 minutes. Set aside.
  3. Assemble the sandwich as follows, spread more mayo inside on both slices, top with tomatoes, sun-dried tomatoes, lettuce, bacon, and finally, the other slice of bread with the parmesan crust on the outside.
