Ingredients
3 tablespoons unsalted butter
1 medium onion, roughly chopped
2 Yukon gold potatoes, cut into small dice
3 cups finely chopped, cooked corned beef
Salt and pepper
Chopped fresh parsley
Instructions
- In a cast-iron skillet, melt butter over medium heat and cook onions for 3- 4 minutes to soften.
- Add potatoes and stir with the onions and cook for 3-4 minutes. Add ¾ cup water to the pan and keep cooking until all liquid has absorbed. Cook for a further 2-3 minutes or until potatoes is tender. Add corned beef and stir to combine, season with salt and pepper and stir in parsley.
- Divide between plates and top with a fried egg or two.
