Homemade guacamole

Regardless of what kind of home cook you are, homemade guacamole is essential to your repertoire. I think the first time I had the best guacamole was when I was living in St Helena in Napa Valley. We would eat at this place on Main street and it truly was the best guac ever! What’s more, they also had such a good tostada salad.

Ingredients

3 avocados, peeled, pitted and cubed

1 cup cherry tomatoes, halved

1/4 red onion, diced

1/2 cup cilantro, finely chopped

1 lime, juiced

1 jalapeno, finely diced

1 teaspoon kosher salt

1/2 teaspoon fresh ground black pepper

Instructions

  1. Place avocado in a large bowl and roughly mash with a fork or potato masher.
  2. Add remaining ingredients and stir gently to combine.
  3. Garnish with some extra red onion and chopped cilantro.
