Easy Orange Chicken

Ingredients

1 packet RIGHT RICE original

1 lb. chicken breast, cut into thin strips

½ cup cornstarch

1 red bell pepper

6oz snow peas, steamed

Vegetable oil, for frying

Sauce:

3 tablespoons soy sauce

¾ cup sweet chili sauce

½ cup fresh orange juice

2 green onions, sliced

¼ cup toasted sesame seeds

Instructions

  1. Prepare Right Rice according to directions. Set aside.
  2. While the rice is cooking, heat about 2 inches of vegetable oil in a heavy pan.
  3. In a separate pan heat 1 teaspoon of oil and saute the red bell pepper for 3-4 minutes. set aside.
  4. Toss chicken with cornstarch and set aside on a plate until the oil heats up.
  5. Meanwhile, in a saucepan add all sauce ingredients together and bring to a simmer until thickened.
  6. Fry chicken for about 2-3 minutes in oil. Working in batches, do not overcrowd the pan.
  7. Toss chicken in a bowl with the sauce and vegetables. Set aside.
  8. Spoon rice on center of the plate, top with sticky chicken and top with sesame seeds and green onions.
