Ingredients
1 cup granulated sugar
7 tablespoons unsalted butter
1/2 cup heavy cream
1 teaspoon flaky salt, such as Maldon
Instructions
- In a dry heavy saucepan over medium heat, heat sugar on its own, until it starts to melt, it will become clumpy at first but keep going, it will melt. It will turn an amber color.
- Add the butter and stir to melt and combine. Be careful it may splatter. Whisk together.
- Stream in the heavy cream and whisk again to combine. Turn off the heat.
- Add salt and let cool for a few minutes before transferring into a jar.
