Ingredients
1 lb ground chicken
2 cups cauliflower florets, steamed
2 cups broccoli, steamed
3 cloves garlic
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 eggs
1 1/2 panko breadcrumbs
1 cup shredded Mexican blend cheese
olive oil
Instructions
1. Steam broccoli and cauliflower in a pan with some water for 5-6 minutes to soften up.
2. Place veggies in a food processor with garlic, salt, and pepper. Pulse a couple of times to break up everything.
3. Place veggies, ground chicken, eggs, breadcrumbs, cheese, and mix. Make nugget-sized (2 tablespoons) pieces with wet hands. Place on a tray.
4. Heat a non-stick pan over medium heat with 1-2 tablespoons of oil. Cook for about 3 minutes on each side.
5. Serve with ketchup for kids or, if you’re an adult, with a big salad.
