Avocado Rotisserie Chicken Salad

This salad is my go-to salad a couple of times a week.

Ingredients

2 heads romaine lettuce, chopped

2 cups rotisserie chicken, shredded

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 cup grilled corn off the cob

1/2 red onion, finely diced

2 tablespoons cilantro, chopped

1 lemon, juiced

2 tablespoons olive oil

salt and pepper to taste

Instructions

  1. Shred rotisserie chicken and set aside.
  2. Prep the rest of the ingredients and toss in a bowl with lemon juice, olive oil, salt, and pepper.
