Ingredients
1 head of cauliflower, broken into florets
2 tablespoons olive oil
1 teaspoons salt
1/2 teaspoon pepper
4 sprigs thyme
1/2 cup pine nuts, toasted
4 tablespoons unsalted butter
1/2 onion, diced
2 cloves garlic, roughly chopped
2 tablespoons chopped parsley
4 Medjool Dates, pitted and chopped
Instructions
- Preheat oven to 425°F. Toss cauliflower on a large baking tray with oil, salt, pepper, and thyme. Roast for 30 minutes.
- in a medium-sized skillet over medium-high heat, melt butter and cook for 3-4 minutes until beginning to brown. Add onion for a cook for 2 minutes, add garlic and stir for 1 minute.
- Add parsley and dates to the pan. Remove cauliflower from the oven and place in a large bowl. Add the date onion mixture
