Ingredients
1 LB ground beef 80/20
1/2 onion (diced)
1 packet fajita seasoning
1 can can diced tomatoes and green chilies
1 can black beans
6 bags Lays Fritos chips
Instructions
- In a large skillet, cook onion for 5 – 7 minutes, add beef and cook over medium heat until no longer pink, breaking into crumbles, 6-8 minutes; drain.
- Stir in chili seasoning mix, tomatoes and beans; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 15-20 minutes, stirring occasionally.
- Just before serving, open corn chip bags, fold over. Add beef mixture and toppings.
- Toppings optional: shredded sharp cheddar, sour cream, green onions, cilantro.
