Ok, so carrots are a classic accompaniment for any dinner party event, or indeed celebration dinner. However, don’t you feel they get a little boring sometimes? I certainly do. So I wanted to switch things up and make them more interesting, and I therefore created this extra delicious take on them. They’ll surely be a talking point on your dinner table. Moreover, they might even encourage any fussy younger guests to eat their veg! They also look great so they are just fantastic to show off your presentation skills!

Tips for Cooking Roasted Pomegranate Date Carrots

  • Undoubtedly make sure your carrots are fresh! While they don’t have to have been just pulled from the ground, the fresher they are, they tastier this (and indeed any carrot) dish will turn out. Seems obvious, but you would be surprised how many people think rather old carrots are still good to cook with.
  • I surely recommend using California dates as the quality is always fantastic, however if you can’t get hold of them do be sure to a good brand. Because you want to get all that delicious sweet flavor out of them.

Roasted Pomegranate Date Carrots

Roasted Pomegranate Date Carrots

  • Total Time: 45 minutes
  • Yield: 4

Ingredients

1/2 cup pomegranate juice

2 tablespoon honey

2-lbs mixed carrots (peeled, stems removed)

2 tablespoons olive oil

1 tablespoon fresh thyme leaves

1/4 teaspoon kosher salt

1/4 teaspoon pepper

1 cup California dates, chopped

1/2 cup walnuts, coarsely chopped

1/2 cup pomegranate seeds

Instructions

  1. Preheat oven to 375°F.
  2. Combine honey and pomegranate juice in a saucepan and simmer for 2 minutes. Set aside.
  3. Combine olive oil, thyme, salt, pepper, and carrots together. Place on a baking sheet lined with parchment paper. Place carrots in the oven and roast for 45 minutes. Half way through brush the carrots with the honey pomegranate sauce and add in the California dates.
  4. Remove carrots from oven, and sprinkle with walnuts and pomegranate seeds.
