  1. Place all pork ingredients in a slow cooker and mix all ingredients so its covered well in it.
  2. Set slow cooker to high for 4 hours or low for 8 hours. (this can be done day before if you wish). Remove meat and shred with two forks.
  3. Preheat oven to 400°F. Grab a large cast iron pan or a sheet pan and place a layer of nacho chips. Top with pork, onion, BBQ sauce, and cheese. Repeat with 2 layers. Place in oven for about 5-8 minutes or until cheese is bubbling. Top with sour cream, jalapeños, salsa and cilantro. ENJOY!!!
