One Pot Butter Chicken

Butter chicken is the General Tso’s of Indian food. My good friend Sham makes this dish for me all the time when I am too tired to cook. This is pretty much his recipe. What I love about this dish is that is wildly luxurious and powerfully flavored. Serve with basmati rice and mango chutney; even better if you can pick up some papadums or naan at the specialty grocery.

Instructions
  1. Marinate chicken breast in chili powder, turmeric, salt and pepper in a Ziploc bag. Let it sit for 10 minutes.
  2. In a Dutch oven or cast iron pot, heat canola oil medium heat and brown chicken in batches, 3-5 minutes, set aside.
  3. Heat 2 tablespoons of unsalted butter over medium heat, add onions, garlic, garam masala, chili powder, ground cumin, cayenne pepper, cinnamon, salt and pepper. Cook until fragrant. About 3-5 minutes.
  4. Add the tomato sauce and bring to a simmer. Add the stock and cream, bring back to a simmer. Return the chicken and simmer covered for another 10 -15 minutes.
  5. Serve garnished with cilantro on top of rice.
