Frito Mobile tacos

I just love these Fritos Mobile Tacos as they are so fun! They will undoubtedly have your whole party talking. And whereas I’m big on taste, of course, sometimes a bit of novelty in the presentation adds that bit of extra something.

The recipe is surprisingly simple so won’t stress you out when you have lots of other food to prepare for a big gathering. Everyone is going to want one, thus while this recipe serves six, you might want to think about doubling up, depending on your numbers. Frito Mobile tacos

Fritos Mobile Tacos

  • Total Time: 30 minutes
  • Yield: 6

Ingredients

1 LB ground beef 80/20

1/2 onion (diced)

1 packet fajita seasoning

1 can can diced tomatoes and green chilies

1 can black beans

6 bags Lays Fritos chips

Instructions

  1. In a large skillet, cook onion for 5 – 7 minutes, add beef and cook over medium heat until no longer pink, breaking into crumbles, 6-8 minutes; drain.
  2. Stir in chili seasoning mix, tomatoes and beans; bring to a boil. Reduce heat; simmer, uncovered, until thickened, 15-20 minutes, stirring occasionally.
  3. Just before serving, open corn chip bags, fold over. Add beef mixture and toppings.
  4. Toppings optional: shredded sharp cheddar, sour cream, green onions, cilantro.
  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
