So it’s no secret that I love cooking with dates, and they add something really special to this already scrummy dessert. You may have had the cherry or perhaps the plain peach version of this French treat, but the Date and Peach Clafoutis is particularly special.

What is Clafoutis?

A clafoutis is a French dessert, from the Limousin region, and although I always eat it as an after dinner sweet, I have actually heard of people who love to have it for breakfast. And of course, that’s up to you! It has a soft, custard-like texture, and tastes altogether magical when topped with cream.

Tips for Making Date and Peach Clafoutis

  • This dessert is certainly best served warm, so allow it to cool for a few minutes once it is out of the oven
  • Alternatively, even better, bake the clafoutis before you start your main meal, so that by the time you are ready for dessert it is just the right temperature
  • Some recipes may tell you to test for readiness using a knife, but I suggest a toothpick as a larger implement can cause the pie to loose it’s puffiness
  • Be sure to have that blender on hand! In fact, the blender is a key ingredient in this recipe…

All in all, this is an impressive dish but it isn’t actually so complicated to make.

Date and Peach Clafoutis

This Date and Peach Clafoutis is such a nice twist on a classic. As the pie bakes it softens the dates giving them a nice toffee chewy texture and taste.

  • Total Time: 60 minutes
  • Yield: 6 people

Ingredients

Butter for pan

1 1/4 cups whole milk

1/2 cup granulated sugar (divided)

3 eggs

1 tablespoon vanilla extract

1/8 teaspoon salt

1 cup flour

6 California dates (pitted and cut into thin slices)

1 peach cut into segments

Powdered sugar for garnish

Instructions

  1. Heat oven to 350 degrees. Lightly butter a medium-size flameproof baking dish or a 8 inch cast iron pan at least 1 1/2 inches deep.
  2. Pour the milk, half the granulated sugar, eggs, vanilla, salt and flour in a blender. Blend at top speed until smooth and frothy, about 1 minute.
  3. Pour a 1/4-inch layer of batter in the baking dish. Turn on a stove burner to low and set dish on top for a minute or two, until a film of batter has set in the bottom of the dish. Set aside.
  4. Spread peach segments and dates over the batter and sprinkle on the rest of the sugar. Pour on the rest of the batter. Sprinkle with more fruit. Place in the oven and bake about 45- 50 minutes, until browned, puffed up and a toothpick comes out clean.
  5. Sprinkle with powdered sugar just before serving.
