16 Nov Colcannon Mash Potato with Bacon
This potato dish is the perfect companion to all your side dishes this Thanksgiving, Super easy and an elevated mash potato straight from the Emerald Isle.
- Put the potatoes in a medium pot, cover with salted water. bring to a boil for about 20-25 minutes. Drain in a colander. Pass the potatoes through a ricer in a bowl.
- Return the pot to the stove and set over medium-high heat. Melt the butter and add the greens and cook for 3 minutes. Add 2 green onions and cook 1 minute more. Heat milk and add to potatoes
- Add more butter for garnish and sprinkle with bacon and left over green onions.
