Preheat oven to 375°F. In a large saucepan cook apples, 1/2 cup water and sugar together over a medium heat for 10-15 minutes until softened. Add cranberries and dates, stir to combine. Set aside. Pour apple mixture into a 9.5 inch baking dish.
In a large bowl, combine oats, four, pecans, brown sugar and unsalted butter. Using your hands press all the ingredients together until it forms big and small crumbles. This can take a few minutes.
Sprinkle crumb topping mixture over the top of the apple mixture. Bake in the oven for 25-30 minutes or until crumble begins to brown. Serve with some good vanilla ice cream.
