So, I love meals that come in bowls. Because of course, I always feel like I am eating healthy, lol. For about a year now I have been a Right Rice partner. I just love looking out for new innovative food products and in this case Right Rice has really hit it on the head. To sum it up, its basically healthy rice but mostly contains vegetables. By all means, make this bowl your own by using Right Rice as the base for it. Likewise, whatever salad you love you can easily change it into a bowl and use this rice product.

What is Right Rice?

RightRice is a vegetable-based grain alternative that in fact tastes and feels just like traditional white rice. It’s mainly made from lentils, chickpeas, and peas, so it has more than two times the protein and five times the fiber of white rice. All in all it is a great, healthy rice alternative. As I have noted, it is quick to make and super user-friendly. To be sure, you are gonna love it.

How to cook it RIGHT!

  • For a whole packet of Right Rice, firstly bring 1 1/3 cups of water to a boil.
  • Then, shut off the heat
  • At this point, add the contents of the bag of the rice
  • Give it a stir through
  • Place the lid on top and let sit until 12 minutes are up. It’s in fact that easy!

Cilantro Lime Chicken Vegetable Bowl

  • Total Time: 30 minutes
  • Yield: 2 servings

Ingredients

1 packet Cilantro Lime Right Rice

For the chicken:

1/2 pound chicken tenders

1 teaspoon Chili powder

1 teaspoon Onion Powder

1 teaspoon Garlic Powder

1/2 teaspoon chili flakes

1/2 teaspoon salt

1/2 teaspoon pepper

1 tablespoon olive oil

For the Aioli: 

1/2 cup mayo

1 teaspoon chili garlic paste

1 teaspoon chopped cilantro

Juice of 1 lime

1/4 teaspoon Salt

1/4 teaspoon Pepper

1/4 teaspoon Garlic powder

Bowl Ingredients: 

1 cup grilled corn

1 cup black beans, drained and rinsed

1 avocado, pitted, peeled and sliced

1 cup cherry tomatoes, halved

Instructions

  1. Prepare Right Rice according to package directions. Set aside.
  2. In a Ziploc bag mix chicken, chili powder, onion powder, garlic powder, chili flakes, salt, pepper, and olive oil. Let sit for 5 – 10 minutes. Heat a nonstick pan and cook chicken for about 4 minutes each side.
  3. in a small bowl, mix mayo, chili paste, cilantro, lime juice, salt, pepper, and garlic powder.
  4. Place a mound of rice in the center of the plate and place each ingredient in a circular position around the bowl like in the photo. Drizzle with the spicy lime aioli.

  1. Tips on cooking the chicken? I don’t get the right temperature in my pan so I end up either burning it or flipping it too much and it doesn’t sear beautifully like yours looks.

    1. I slice it half lengthwise and cook it on a hot pan with some olive oil for about 4 minutes each side.
