Growing up, I didn’t much go for brussels. They were always so bland and…well…cabbagey! These days, however, I have discovered how many delicious ways there are to prepare them, and I don’t ever want to do a holiday dinner without them.

This recipe offers a new twist on brussels sprouts. The sweetness of the dates adds a delicious layer of flavor, while the pistachios add a unique texture. With the bacon and cheese in there as well, you have a brussels spouts dish that is good enough to serve on its own, and will be a winner on every holiday table!

Brussels Sprouts, Pistachios and Dates

Brussels Sprouts, Pistachios and Dates

Ingredients

2 lbs Brussels sprouts
6 slices bacon, chopped
1 cup diced onion
1/2 cup pistachios, toasted
1/2 cup grated pecorino cheese or Parmesan
4 Medjool dates, pitted and chopped
Salt
Pepper

Instructions

1. Cook bacon in a large non stick skillet over a medium high heat until crispy. Remove. Keep the fat in the pan.
2. Add onion and cook for 3-5 minutes.
3. Meanwhile shred Brussels sprouts in a food processor. Add to the pan and cook for 2-3 minutes.
4. Add bacon, dates and half the pistachios and cook for a further 2 minutes.
5. Serve on a large platter or plate.
6. Top with remaining pistachios and pecorino cheese. Enjoy!
