Toffee Chocolate Chip Cookies

Without a doubt, these are the absolute best cookies I make. Especially because they are perfect to share with friends and family this time of year. Besides, it is the combination of caramel and toffee pieces that gives it its chewy texture.

Ingredients

1 3/4 cups all-purpose flour

1 teaspoon kosher salt

1 teaspoon baking soda

1 cup unsalted butter, divided

1 cup dark brown sugar

1/3 cup granulated sugar

1 large egg

2 large egg yolks

1 tabelspoons vanilla extract

8oz bittersweet chocolate chips, coarsely chopped

3/4 cup homemade caramel sauce cooled

Instructions

  1. Preheat oven to 375°F.
  2. Combine flour, salt, and baking soda together in a bowl.
  3. Mix butter and both sugars together until pale and fluffy. Add eggs in two batches and mix for 30 seconds more in a mixer. Add in vanilla and mix for 5 seconds. Fold in chocolate and let the dough rest in the fridge for 30 minutes.
  4. Scoop out dough using a 2-inch ice cream scoop and place on a baking sheet lined with parchment paper. Make an indentation in the center and pour roughly a teaspoon of caramel sauce into the center.
  5. Bake in the center of the preheated oven for 8-10 minutes. Let cool and enjoy!
