Ingredients
1 packet Cilantro Lime Right Rice
For the chicken:
1/2 pound chicken tenders
1 teaspoon Chili powder
1 teaspoon Onion Powder
1 teaspoon Garlic Powder
1/2 teaspoon chili flakes
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
For the Aioli:
1/2 cup mayo
1 teaspoon chili garlic paste
1 teaspoon chopped cilantro
Juice of 1 lime
1/4 teaspoon Salt
1/4 teaspoon Pepper
1/4 teaspoon Garlic powder
Bowl Ingredients:
1 cup grilled corn
1 cup black beans, drained and rinsed
1 avocado, pitted, peeled and sliced
1 cup cherry tomatoes, halved
Instructions
- Prepare Right Rice according to package directions. Set aside.
- In a Ziploc bag mix chicken, chili powder, onion powder, garlic powder, chili flakes, salt, pepper, and olive oil. Let sit for 5 – 10 minutes. Heat a nonstick pan and cook chicken for about 4 minutes each side.
- in a small bowl, mix mayo, chili paste, cilantro, lime juice, salt, pepper, and garlic powder.
- Place a mound of rice in the center of the plate and place each ingredient in a circular position around the bowl like in the photo. Drizzle with the spicy lime aioli.
