Chicken Pot Pie with a Tater Tot Crust

Chicken Pot Pie With Tater Tot Crust- The ultimate comfort food from Chef Stuart O'Keeffe.

Chicken Pot Pie with a Tater Tot Crust

Chicken pot pie with a tater tot crust, what could be better?! I first made this dish on Food Network’s Let’s Eat! and again on the Food Network Kitchen app! Have you heard about this app yet? I teach live cooking classes on the app often. And when you watch one of my live classes, you can log in and ask me questions live! Go download it HERE and join me for some food cooking classes. I have some great ones coming up soon and I’d love for you to join me as I cook.

Now, back to this amazing combination of creamy chicken and vegetables, topped with crispy tater tots. This is the ultimate comfort food that is perfect for a crowd! I love dishes like this that are easy to double (or triple if you’re hosting a party) and can be cooked in one pan. I believe every kitchen should have a good quality, cast iron skillet. It’s one of those classic items that can be used for almost anything. From this chicken pot pie with tater tot crust, to a perfectly seared steak, or even a fluffy omelet, a cast iron skillet can do it all.

Why pre-shredded rotisserie chicken?

You’ll notice this recipe calls for shredded rotisserie chicken. This is a favorite time saver of mine. You can pick up a cooked, rotisserie chicken at almost any grocery store. Some stores even sell the meat pre-shredded to make it even easier on you. While I love to roast my own chickens when I have the time, using pre-shredded rotisserie chicken is a cooking hack I utilize often in my busy life.

I know you’ll love how this chicken pot pie with a tater tot crust tastes. When you make it, be sure to share it on Instagram with the hashtag #chefstuart. Speaking of Instagram, be sure to follow me on the app to hear when I’m cooking on the Food Network Kitchen app!

  • 6 Tbsp. 3/4 stick unsalted butter
  • 4 celery stalks chopped
  • 3 carrots peeled and chopped
  • 1 leek white and light green parts only, thinly sliced
  • 1 Tbsp. fresh tarragon chopped
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 1/2 cups heavy cream
  • 1/4 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • 1 1/2 cups frozen peas
  • 3 cups shredded rotisserie chicken meat
  • 1 bag 2 lbs. frozen tater tots

  • Let's Cook!
  • Preheat the oven to 400º F.
  • Melt 2 Tbsp. of the butter in a 10-inch cast iron skillet over medium heat. Add the celery, carrots, leeks, and tarragon. Cook, stirring occasionally, until the vegetables are softened, 3-5 minutes. Transfer to a bowl and set aside. Wipe out the skillet.
  • Add the remaining 4 tablespoons butter to the skillet over medium heat, sprinkle in the flour and whisk until a paste forms and starts to bubble. Whisk in the chicken broth and continue to cook until it begins to thicken, 3 to 5 minutes. Whisk in the cream and cook until it thickens, about 1-2 minutes. Stir in the salt and pepper.
  • Return the vegetables to the skillet; add the peas and chicken and stir to combine. Sprinkle the frozen tater tots all over the filling to cover the chicken mixture completely. *There will be extra tater tots, reserve for another use.
  • Bake the Chicken Pot Pie until the tots are golden brown and the filling is bubbling, about 30 minutes.
  • Let cool for 5 minutes before serving.
