Chicken Pot Pie with a Tater Tot Crust

Now, back to this amazing combination of creamy chicken and vegetables, topped with crispy tater tots. This is the ultimate comfort food that is perfect for a crowd! I love dishes like this that are easy to double (or triple if you’re hosting a party) and can be cooked in one pan. I believe every kitchen should have a good quality, cast iron skillet. It’s one of those classic items that can be used for almost anything. From this chicken pot pie with tater tot crust, to a perfectly seared steak, or even a fluffy omelet, a cast iron skillet can do it all.

Why pre-shredded rotisserie chicken?

You’ll notice this recipe calls for shredded rotisserie chicken. This is a favorite time saver of mine. You can pick up a cooked, rotisserie chicken at almost any grocery store. Some stores even sell the meat pre-shredded to make it even easier on you. While I love to roast my own chickens when I have the time, using pre-shredded rotisserie chicken is a cooking hack I utilize often in my busy life.

Chicken Pot Pie with a Tater Tot Crust

Chicken Pot Pie with a Tater Tot Crust, the ultimate comfort food!

Ingredients

  • 6 Tbsp. 3/4 stick unsalted butter
  • 4 celery stalks chopped
  • 3 carrots peeled and chopped
  • 1 leek white and light green parts only, thinly sliced
  • 1 Tbsp. fresh tarragon chopped
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 1/2 cups heavy cream
  • 1/4 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • 1 1/2 cups frozen peas
  • 3 cups shredded rotisserie chicken meat
  • 1 bag 2 lbs. frozen tater tots

Instructions

  • Let's Cook!
  • Preheat the oven to 400º F.
  • Melt 2 Tbsp. of the butter in a 10-inch cast iron skillet over medium heat. Add the celery, carrots, leeks, and tarragon. Cook, stirring occasionally, until the vegetables are softened, 3-5 minutes. Transfer to a bowl and set aside. Wipe out the skillet.
  • Add the remaining 4 tablespoons butter to the skillet over medium heat, sprinkle in the flour and whisk until a paste forms and starts to bubble. Whisk in the chicken broth and continue to cook until it begins to thicken, 3 to 5 minutes. Whisk in the cream and cook until it thickens, about 1-2 minutes. Stir in the salt and pepper.
  • Return the vegetables to the skillet; add the peas and chicken and stir to combine. Sprinkle the frozen tater tots all over the filling to cover the chicken mixture completely. *There will be extra tater tots, reserve for another use.
  • Bake the Chicken Pot Pie until the tots are golden brown and the filling is bubbling, about 30 minutes.
  • Let cool for 5 minutes before serving.
