Ingredients:
5 roma tomatoes, halved
4 carrots, roughly chopped
2 bulbs garlic tops cut off
1 large onion, roughly chopped
1 green zucchini, sliced
1 yellow zucchini, sliced
2 tablespoons extra virgin olive oil
2 teaspoons LOVELY SEASONING greek
4 cups vegetable stock
1 can coconut cream

Method:
1️⃣Preheat oven to 375°F.
2️⃣Prepare vegetables like in the video and place on a large baking sheet.
3️⃣Toss with olive oil and seasoning. Roast for 40 minutes in the oven.
4️⃣Throw it all into a blender and let it RIP! Enjoy!

Ingredients below

For the Boxty Pancakes:
* 2 cups grated raw potatoes
* 1 cup all-purpose flour
* 1 cup grated cooked potatoes
* 1 cup buttermilk
* 1 egg
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* Butter or oil for cooking

For the Corned Beef Hash:
* 1 1/2 cups cooked corned beef, diced
* 2 cups cooked potatoes, diced
* 1 onion, finely chopped
* 1 red bell pepper, diced
* 2 cloves garlic, minced
* Salt and pepper to taste
* 2 tablespoons vegetable oil

For the Poached Eggs:
* 4 large eggs
* Water
* 1 tablespoon white vinegar

Mammy’s Chicken Dinner

Ingredients  8 chicken thighs  2 tablespoon olive oil
2 teaspoons Lovely Seasoning Original 3 carrots 1/2 inch sliced  1 small onion diced  2 stalks celery diced 3 tablespoons flour
1 teaspoon fresh chopped rosemary 1 teaspoon fresh chopped thyme salt and pepper to taste 2 russet potatoes peeled and large dice 4 cups chicken broth or chicken stock
1 Gravy packet ½ cup heavy cream
4 ounces frozen peas optional

Method:
1️⃣ Heat olive oil over medium heat in a large Dutch oven. Cook chicken thighs coated in seasoning about 3 minutes each side. Set aside.
2️⃣ In the same pot, add the carrots, onion, and celery. Cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes.
3️⃣ Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
4️⃣ Add the chopped rosemary, thyme, salt, and pepper to the pot, and stir to combine.
5️⃣ Add the diced potatoes and chicken broth to the pot, and bring the mixture to a simmer.
6️⃣ Return the seared chicken thighs to the pot, the gravy packet, nestling them into the liquid and vegetables.
7️⃣ Cover the pot with a lid and simmer for 15-20 minutes.
8️⃣ Remove lid, shut off heat and stir in the heavy cream.
9️⃣ Serve and enjoy!

Brioche Caramel Crunch

Ingredients
4-5 thick slices brioche bread, crusts removed
1 stick unsalted butter, room temp
1/2 cup light brown sugar
2 tablespoons honey
For serving:
Fresh whipped cream
Caramel sauce

Method:
1️⃣Preheat oven to 375°F.
2️⃣Combine butter, brown sugar, honey in a bowl. Mix well until you have a paste.
3️⃣Spread butter mixture on all bread slices and sides.
4️⃣Bake for 8 minutes, then flip and bake for 8-10 more.
5️⃣Allow to cool until the top becomes crispy, about 7-10 mins.
6️⃣Serve with whipped cream and caramel sauce.

Healing Harvest Soup

Ingredients:
• 2 tabelspoons olive oil
• 2 Leeks, chopped
• 4 Carrots, sliced
• 1 Onion, diced
• 4 cloves Garlic, minced
• Salt and Pepper, to taste
• 6 cups Vegetable Stock
• 1 can Cannellini Beans, drained and rinsed
• 1 can Garbanzo Beans (Chickpeas), drained and rinsed
• 2 tablespoons Chopped Parsley
• 2 medium Zucchinis, diced
• 2 heads Broccoli, chopped into florets
• 2 tablespoons Lovely Seasoning (You can use your favorite seasoning blend)
Instructions:
1️⃣Heat oil in a large pot or Dutch oven over medium heat.
2️⃣then add the chopped leeks, carrots, and onion. Sauté for about 5 minutes or until the vegetables start to soften.
3️⃣Add the minced garlic and continue to cook for another 1-2 minutes.
4️⃣Season the vegetables with salt, pepper, and the Lovely Seasoning.
5️⃣Pour in the vegetable stock and bring the mixture to a boil.
6️⃣Once boiling, reduce the heat to a simmer, and add the Cannellini beans, Garbanzo beans, diced zucchinis, and broccoli florets.
7️⃣Simmer for about 10-15 minutes or until the vegetables are tender and cooked to your liking.
8️⃣Stir in the chopped parsley for a fresh and vibrant flavor.

🌮 Taco Pasta 🍝

Method
Ingredients:
1 tablespoon olive oil
1 pound ground beef
1 yellow onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
4 cloves garlic, minced
2 tablespoons Taco Seasoning
2 cups beef stock
1 cup prepared pico de Gallo
1 cup tomato sauce
8 oz elbow Marconi
1 (15-ounce) can black beans, rinsed and drained

For serving:
🥑 Diced avocado
🥄 Nonfat plain Greek yogurt
🌿 Chopped fresh cilantro
🌶️ Jalapeño, sliced
🧀 Shredded sharp cheddar cheese for topping
Method:
1️⃣ In a large, deep skillet, heat olive oil over medium-high heat. Add ground beef, remove, and set aside.
2️⃣ Add onion, red and green bell peppers, and cook for 5-6 minutes.
3️⃣ Add the garlic, Taco Seasoning, salt, and pepper. Cook just until the garlic is fragrant, about 30 seconds.
4️⃣ Add the beef stock, pico de gallo, tomato sauce, pasta, and beans.
5️⃣ Reduce the heat to medium-low and simmer gently, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed (more liquid will absorb as it cools), about 12 to 15 minutes.
6️⃣ Serve hot with any of your favorite toppings.

11 minute Pasta

Ingredients:
• 8 ounces Farfalle pasta
• 1 (5-ounce) package of baby spinach, roughly chopped
• 4 ounces cream cheese, cut into chunks
• ¾ cup half and half
• ½ cup grated Parmesan cheese
• 1 tablespoon garlic powder
• ¼ teaspoon ground pepper
• 1 cup jarred sun dried tomatoes

Instructions:
1️⃣Cook the pasta according to the package instructions.
2️⃣Meanwhile, In a large saucepan over medium heat, Add spinach to the pan with 1/4 cup water.
3️⃣Combine the cream cheese and half and half. Stir until melted and the mixture is smooth.
4️⃣Add the Parmesan cheese, garlic powder, and ground pepper.
5️⃣Stir until sauce has thickened. Add in sun dried tomatoes.
6️⃣Cook for a few minutes until the spinach has wilted.
7️⃣Add the pasta to the saucepan and toss everything together until the pasta is coated.
8️⃣Serve the dish hot, garnished with additional grated Parmesan cheese.

Lemongrass Chicken Stew

Ingredients:

For the Chicken:
1 pound boneless skinless chicken thighs
1 tablespoon Lovely seasoning original
Olive oil

For the Lemongrass Sauce:
4cloves garlic, minced
1 jalapeño, ribs and seeds removed, minced
1 tablepooon chopped ginger, grated or minced
2 tablespoons lemongrass
1 tablespoon brown sugar
1 can (14 ounces) unsweetened coconut cream
Juice and zest of one lime
Salt to taste

To Serve:
Chopped cilantro
Cooked rice

Instructions:
1️⃣Season the chicken thighs with lovely seasoning.

2️⃣In a large skillet or frying pan, heat a drizzle of olive oil over medium-high heat.

3️⃣Add the seasoned chicken thighs to the hot skillet and cook for about 4-5 minutes per side or until they are browned and cooked through. Remove the chicken from the skillet and set it aside.
4️⃣In the same skillet, add a bit more olive oil if needed.

5️⃣Add minced garlic, minced jalapeno, and ginger. Sauté for about 1-2 minutes until fragrant. Add Lemongrass and Sugar: Add Coconut Cream and Lime: Stir well to combine all the ingredients. Bring the sauce to a gentle simmer and let it cook for about 5-7 minutes, or until it thickens slightly.

6️⃣Slice the cooked chicken thighs into strips or bite-sized pieces, add to the sauce.

7️⃣Serve the chicken over a bed of cooked rice with the zucchini. Garnish with chopped cilantro.
