15 Nov Sweet Potato Casserole with Marshmallows
When I first came to the states and saw this on the table I truly thought you guys had lost the plot. Potato and marshmallow. No thanks. But after 3 servings and I was saying YEP THIS IRISHMAN IS ON BOARD!! Here is my recipe.
- Preheat oven to 375°F. Place sweet potatoes in cold water in a pot and simmer for 15-20 minutes or until tender.
- Drain water, and in the pot add sugar, butter and salt, half the pecans and vanilla. Mash until well combined. Smooth out mixture in a 11 x 7 inch baking dish.
- Sprinkle with remaining pecans and all the marshmallows and bake in the oven for 25 minutes or until the marshmallow begins to lightly brown.
